Observations & Corrective Actions
1: Pic unaware of basic food safety practices. Hot and cold holding, cooling, reheating, employee illness symptoms, etc. Discussed and will be emailing Demonstration of Knowledge Fact sheet.
2: Unaware of what specific symptoms you can not work around food. Owner stated coughing and sneezing. Discussed what symptoms employees could not work around food and I will be emailing an employee illness fact sheet to them.
9: Upon entering mobile unit observed some metal containers covered with aluminum foil in containers on the floor (2 pans Baked Beans, 1 Pan Mac and Cheese, and 1 pan of Spaghetti with meat sauce). I asked one person where was the food prepared, in their house or in the mobile unit. They stated their house. Then another person stated it was prepared in the mobile unit. Then another person stated that just the cans were opened in their house. Discussed with owner that no food can be prepared or opened in their house and then served to the public. That it was not a permitted kitchen that we inspect. The food that they sell to the public must be prepared on the mobile unit. Even the cans must be opened on the mobile unit. The food was removed from the mobile unit.
19: Mac and cheese and Spaghetti with meat sauce out of temperature control that was previousely heated up was temping below 135°F. Embargoed, removed from mobile unit. Baked beans that were heated up were above 135°F, but they were opened inside their house so they were embargoed. Discussed hot holding temp.
20: Raw Pork Chops bought this morning at 9 am sitting out not in temperature control (In Frig) was temping at 63°F. Raw chicken wings out of temperature control sitting out since 9am this morning was temping at 53°F. Discussed that these foods (tcs foods) must be kept cold under temperature control at 41°F. Embargoed food. Raw chicken wings and pork chops were removed from mobile unit. Raw seasoned ribs and raw fish were sitting out but they were temping below 41°F. Discussed to hook up / turn on frig and place food in frig / cooler. So the temperature of the foods will not exceed 41°F.

Additional Comments
Upon arrival observed charcoal grill outside mobile unit. Discussed that grill could not be used. Gentleman stated grill did not work. Mobile unit arrived a few minutes prior to me pulling up in my car. Emailing applicable fact sheets to operator regarding observed priority item violations. Only observed 1 steam well (not set up) and stand up frig / freezer, and griddle. There were a few big boxes in the corner of the mobile unit. Owner stated their was another steam well and frier. A follow up inspection will be performed within 10 days to verify compliance of all priority item violations. All violation with a star and red on the sheet with the score.
