13: (Out) raw seafood stored improperly above cut broccoli in walk-in cooler. Corrective Action- educated on not storing raw meats above ready to eat foods, item relocated as required. Item will be checked at 10 day follow-up.
20: (Out) observed raw beef in large pan sitting at ambient room temperature temp at (59.0°). Product not within proper cold holding temps. Improper preparation of raw beef due to cutting large portions at one time. Manager states that item was processed 30 minutes earlier. Item unattended at time of inspection. Corrective Action- discussed processing smaller portions and placing in cooler immediately.
Observed pan of shelled eggs stored on shelf by grill temp at (55.2°). Person in charge states that item has been there since this morning. Corrective Action- educated on proper cold holding and person in charge embargoed approximately 4lbs of shelled eggs. Item requires a RCP and will be checked at follow-up.
31: Observed cooked/chopped meat improperly cooling on shelf by back door, item temp at (70°) and is within the first 2 hours of cooling process.
36: Observed live roach on floor by white fridge.
37: Storing meat in grocery bags and not in approved food contact containers. Observed spices/seasonings stored uncovered/unprotected on roll cart by cook top.
39: Wet wiping clothes improperly stored throughout kitchen, not in approved sanitizer buckets.
41: Observed spoon improperly stored in cold standing water, item must be stored in hot water or under running water.
