1: Person in charge could not demonstrate basic food safety knowledge. Corrective action, person in charge needs to have baisc food knowledge

2: There was no employee health policy available and person in charge can not demonstrate knowledge. Corrective action, I provided a copy.

13: 1200-23-01-.03(3)(b)1. Raw shelled eggs stored above above ready to eat pepperoni, cheese and milk in walk in cooler. Corrective action, proper vertical storage of raw and ready to eat was discussed. Person in charge moved raw shelled eggs to the bottom shelf.

14: Establishment does not have sanitizer and does not know how to set up 3 compartment sink. Corrective action, kitchen has agreed to close voluntarily. Kitchen only opens on Wednesday’s and the employees are all volunteers. Kitchen might be exempt from routine inspections. I will verify this in the office and might delete permit.
