4: Upon arrival, observed employee leaning against soup steam well drinking bottle of water. Cos by pic discussing proper eating and drinking away from food and food prep areas.

20: House made cooked meat balls and sliced tomatoes on makelines; top portions temped 49F or greater, bottom portions were 41F or cooler. Bins were filled past fill line and makeline is open air with no cover. Pic stated both foods were pulled from wic to stock makeline this morning. Wic ambient temp reads 37F, all tcs foods temped in wic were 41F or cooler. Assume foods in question left wic 41F or cooler. Cos by pic discarding top portions of both foods equivalent to 1 lb total.

42: Several dozen plates of varying size stored upright on shelf above makeline. Shelf surface is somewhat sticky and has mild dust build up. Discussed cleaning surface and storing plates and other food contact surfaces inverted to prevent potential contamination.

46: Top of dish machine is dirty and has white residue buildup
