27: For their cooking and reheating HACCP logs, the only up to dates logs they had were one paper from 10/29-11/20 and another paper only from 09/17/23. Ca: Discussed with operator according to their HACCP plan, must maintain the logs for 6 months.

27: For their cold holding HACCP logs, the only records maintained were one paper from 10/24-11/24 and another paper only from 04/05. Missing logs from mid April up to mid October 2023 Ca: told employees that according to their HACCP plan, they have to maintain according to their plan for a year. Will followup to make sure they are implementing upkeeping their HACCP logs
