20: Shredded lettuce on makeline temps 45F. Pic stated it was stocked within past half hour. Cos by pic placing lettuce in meat ric to cool down. Discussed monitoring makeline temps to ensure prep cooler is reaching adequate temperature for cold holding.

20: Tomatoes on makeline temp 48F. Pic says theybwere stocked this morning, roughly 4 hours ago. Cos by embargoing 2 lbs and pic restocking from ric. All tcs food inncold holding must be kept at 41F or lower.
