Complaint about getting sick after eating fried rice. No fried rice was found out of temps during inspection. Training was provided on proper cooling techniques from thermometer calibration to cooling methods and time requirements. It was decided that rice would be cooled in freezer from 135° to 41° in the walk in freezer with rice being stirred and time checked every thirty minutes. Rice will them be covered and moved to walk in cooler. 5 bags of sushi was found being held on bottom shelf of prep table at 77°. Owner voluntarily discarded rice. Tilt and temperature methods were discussed concerning holding of sushi rice.
