Additional Comments

Reviewed and discussed proper cooling for chicken into buckets from warmers as no new stocker is placed for additional product placed. Discussed ensuring cooling from 135F to 70F in 2 hours, and 70F to 41F and below in 4 hours. Adding additional product to already cooling batches may complicate cooling if not following the first sticker added.
