20: Garnish cooler by heat lamp has temperature of 54 F at time of inspection — person in charge states cooler recently underwent maintenance and temperature checks and attributed high temperature to void due to missing 1/6th pan. All items out of temp range placed at 11 AM (current time is 12:45 PM); Corrective Action: replaced pan and monitored temperature until it dropped to 40 F
