20: Beef roast sitting on a tray next to oven on cook line reading at 52 F. Nobody is working with the products. There are 6 Packages . Employee stated that she brought it out 30 minutes from the walk in cooler because the middle was still frozen. ( CA) trained her on proper thawing methods and told her to not leave TCS food sitting out at room temperature ntil she is ready to work with the product. Had them to moved it to walk-in cooler
