8: Observed a Pastry rack blocking access to the only hand sink in the kitchen - at that time all employees stayed on task. The pastry rack was moved. Discussed leaving the space in front of the hand sinks open and unblocked. A warning letter will be requested due to violation being noted on two consecutive routine inspections. 14: Observed the 3 compartment sink being used to thaw meat at the beginning of the inspection, then observed the person in charge remove the meat and begin using the sinks for washing dishes. Corrected On Site by discussing with the person in charge, further separating the meat from the dish area, and then washing/rinsinsing/sanitizing the 3 compartment sinks. Observó que el fregadero de 3 compartimentos se utilizaba para descongelar la carne al comienzo de la inspección, luego observó que la persona a cargo retiraba la carne y comenzaba a usar los fregaderos para lavar los platos. 20: Observed unpasteurized, shelled eggs sitting out pn the counter. Person in charge said the eggs where out for an hour or so and they leave the eggs out to reach room temperature before using in baking. Discussed with person in charge that shelled eggs must be held at 41°f or below, or they can sit out if they are pasteurized or on a time policy. Embargoed 4 trays of shelled eggs. Showed person in charge a time policy in spanish and asked if they would like help in creating a time policy - person in charge said yes and a policy was written, and new eggs placed on time policy. Se observaron huevos sin pasteurizar y sin cáscara sentados en el mostrador. La persona a cargo dijo que los huevos estaban fuera durante una hora más o menos y que dejan los huevos fuera para que alcancen la temperatura ambiente antes de usarlos en la cocción. Additional Comments

At the time of the routine, payment for the renewal of the food establishment permit had not been received. Employee called owner, owner said they would call the supervisor at the TDH department and pay over the phone.

Will return sometime within 10 days to ensure the correction of the observed priority item violations #8, 14, and 20

A warning letter will be requested due to violation # 8 and #20 being noted on two consecutive routine inspections. Will provide applicable fact sheets to operator regarding Priority Item Violations in spanish via email. Discussed implementing a Food Safety Plan (FSP) in order to obtain active managerial control over repeated priority violations. Advised operator I was available to assist with developing a FSP.

En el momento de la rutina, no se había recibido el pago por la renovación del permiso de establecimiento de alimentos. El empleado llamó al propietario, el propietario dijo que llamarían al supervisor del departamento de TDH y pagarían por teléfono.
