20: Sliced lettuce stored in ice bath in pc temps 66F. Pic stated it was pulled from cooler and placed in ice bath within past hour. Ice only reaches bottom inch of tall container.

20: Cooked pork and cheese mix stored on table beside grill under no temperature control temps 63f. Employee was pulling from mix to reheat on grill as orders were placed. Cos by discussing tcs foods either holding at 41F or less or 135F or higher, pic placed foods in deep ice bath to rapidly cool and hold near grill. All cold tcs foods must be held at 41F or less.

31: Melon cut in past 2 hours in pans stored in large cooler full of ice temp 54F. Ice only contacting bottom of large plastic pans. Advised pic to fill ice around sides of pans to facilitate better cooling. Pic complied.

34: No thermometer in white LG fridge

41: Scoops stored with handles contacting ice in two separate ice bins.
