Person in charge states they use Time as a Public Health Control (TPHC) for everything placed on the line for service, employee did not have production sheets available to her but has the temperatures taken memorized for when they do become available. CA: logs written down during inspection.
Additional Comments
Person in charge states the pizza are prepped before linch and placed in cooler to cool, then small batched are brought out at a time instead of having the whole rack sit out for an hour during the whole lunch service. Will come during lunch service for the next inspection.
