14: Observed employee washing dishes at the 3 compartment sink by rinsing in first compartment then using a soap mixture from a small container to wash, then rinse with the hose - first compartment showed less than 10ppm of bleach, the small container showed 200ppm of bleach (see violation 26). 18: Observed cut cantaloupe and cut honeydew melon at 50°f, person in charge stated it was cut at noon and placed in the make line, all other foods requiring temperature control were within temperature. Corrected by discarding the fruit and discussing holding temperature and recommended turning the temperature down. Employees did not know food supplier and no invoices where on site, owner or manager must provide our department with the list of food suppliers to ensure they are from an approved source.
