1: Too many critical violations. No managerial control over kitchen. Person in charge does not demonstrate or know the knowledge to proper reheating, cooking, cold holding, and hot holding temperatures, food storage, ware washing, and hand washing procedures.

11: Lettuce observed in walk-in cooler were observed with white fuzzy substance. 2 Cans of tomato sauce in dry storage area are damaged. Corrective Action: embargoed

13: Raw chicken was observed on shelf above of oysters and other seafood products inside of walk-in cooler. Observed a bundle of cilantro on floor in walk-in cooler. Corrective Action: embargoed

14: Observed Employee only washing and rinsing dishes. Employee did not sanitize them. Corrective Action: trained proper ware washing procedures.

20: Rice that was cooked yesterday observed in walk-in cooler at 49F Corrective Action: embargoed

21: Pork on walk-in cooler and pork in low boy cooler that was cooked from day before, heavy cream opened the day before did not have date markings. Corrective Action: trained on proper date marking procedures.

26: Unlabeled chemical bottle observed in kitchen. Soap stored on top of ice machine, transmission fluid observed on shelf over single service aluminum foil sheets. Corrective Action: Person in charge moved and labeled items.

33: Frozen raw beef was being thawed in 3 compartment sink in standing water.

36: Observed several fly traps hanging from ceiling in prep area. Back door in dry storage is missing self closing mechanism.

37: Several Personal drinks on prep table, personal jacket and water bottle stored on prep table.

37: Cooked rice is being stored in a plastic togo bag inside of walk-in cooler.
