2: Observed individual small plastic containers of tomato based salsas at 61F in front self-service cold-holding unit. Corrective Actions: Must maintain all cold-hold TCS foods (tomato based salsa) at or below 41F at all times or document time taken off of temperature control and discard remaining containers after 4 hours. If holding on time, must document time placed and discard time (not to exceed 4 hours).
9: Observed multiple containers of uncovered food throughout the establishment (2 containers of queso in warmer next to chip warmer, plastic bag of potatoes in walk-in cooler, large white container of sugar under prep table directly across from back handsink). Corrective Actions: Must cover/protect all containers of food when not actively in use.
10: Observed dark foreign debris on inner surface of nozzles at soda dispenser in customer service area. Corrective Actions: Must wash, rinse, and sanitize nozzles daily. Recommend using a bristle brush to remove debris during wash step.
10: Observed no sanitizer bucket prepared at start of inspection. Corrective Actions: Must have sanitizer solution prepared at start of operations and changed throughout operating hours as necessary.
10: Observed mold-like growth on inner components of ice machine (black lip above the ice and blue walls where black lip meets). Corrective Actions: Must empty, wash, rinse, and sanitize the ice machine per manufacturer’s instructions.
18: Observed multiple unlabeled spray bottles of various liquids handing on metal shelving unit near ice machine. Corrective Actions: Must label all working containers with common name of chemical.
21: Observed no Certified Food Manager (CFM) onsite during inspection. Corrective Actions: Must have a CFM onsite at all times during hours of operation.
29: Observed broken thermometer in walk-in cooler. Corrective Actions: Must have working internal thermometers in all cold-holding units, placed in the warmest part of the unit.
31: Observed soiled wiping cloth in handsink near 3-compartment sink and plastic jug used to fill tortilla warmer in handsink near stove. Corrective Actions: Must use handwashing sinks for hand washing only.
32: Observed broken gasket on door to walk-in cooler. Corrective Actions: Must repair to ensure proper internal temperature is maintained in walk-in cooler.
42: Observed mold-like growth on gaskets of prep cooler across from fryers and on door to walk-in cooler. Corrective Actions: Must clean.
45: Observed accumulation of dust at air vents through out the back kitchen. Corrective Actions: Must clean to prevent environmental contamination.
