Slices of ham, cheese, and dough observed on sheet pan in the kitchen area. Temperature of ham and cheese measured 65F at time of inspection. All items were discarded to trash by employee. Keep all potentially hazardous food items in refrigeration at/below 41F. Corrected during inspection.
8: 114000 MAJOR VIOLATION
Approximately 12 cooked ham and cheese croissants observed in glass display case at room temperature. Employee stated that they are under time as a public health control (TPHC). However, TPHC logs have not been filled out for over one month. All items were discarded to trash by employee. Corrected during inspection.
NOTE: Due to major violations, current TPHC plan is no longer approved for ham and cheese croissants. Facility owner may submit a new/revised TPHC plan to our department for review and approval. Until that time, all ham and cheese croissants must be stored in refrigeration at/below 41F prior to sale.

At time of inspection, faculty had no sanitizer for washing dishes, utensils, and food preparation surfaces. All food contact surfaces must be sanitize in accordance with California Health & Safety Code. Note: Sanitizer was acquired at time of inspection. Two compartment dish sink was correctly set up for manual dishwashing. Corrected during inspection.
