7: 113996, 113998, 114037 MAJOR VIOLATION Slices of ham, cheese, and dough observed on sheet pan in the kitchen area. Temperature of ham and cheese measured 65F at time of inspection. All items were discarded to trash by employee. Keep all potentially hazardous food items in refrigeration at/below 41F. Corrected during inspection.

8: 114000 MAJOR VIOLATION Approximately 12 cooked ham and cheese croissants observed in glass display case at room temperature. Employee stated that they are under time as a public health control (TPHC). However, TPHC logs have not been filled out for over one month. All items were discarded to trash by employee. Corrected during inspection. NOTE: Due to major violations, current TPHC plan is no longer approved for ham and cheese croissants. Facility owner may submit a new/revised TPHC plan to our department for review and approval. Until that time, all ham and cheese croissants must be stored in refrigeration at/below 41F prior to sale.

14b: 114097, 114099.1, 114099.2, 114099.4, 114099.6, 114099.7, 114101, 114105, 114109, 114111, 114185.3 (a-c) MAJOR VIOLATION At time of inspection, faculty had no sanitizer for washing dishes, utensils, and food preparation surfaces. All food contact surfaces must be sanitize in accordance with California Health & Safety Code. Note: Sanitizer was acquired at time of inspection. Two compartment dish sink was correctly set up for manual dishwashing. Corrected during inspection.

30a: 114047, 114049, 114053, 114055, 114069 (b) Food containers placed on the floor in the kitchen area. All food items must be stored above the floor. Correct within 1 day.

33: 114115(b), 114257 Food residue buildup observed on flooring under equipment. Clean flooring in these areas at greater frequency to prevent buildup. Correct within 7 days.

34: 113984(e), 114067(f,g), 114099, 114099.3, 114099.5, 114101(a), 114101.1, 114101.2, 114103, 114107, 114125 Black mold growth observed inside two compartment dish sink at time of inspection. Sink was cleaned and sanitized by employee. Corrected during inspection. Sanitizer test strips have deteriorated. Purchase new strips to test sanitizer concentration. Correct within 7 days.

38: 114149, 114149.1, 114149.2, 114149.3, 114252, 114252.1 Light out inside hood ventilation system. Replace light bulb. Correct within 7 days. Dust and grease accumulation observed on hood filters. Clean hood filters frequently. Correct within 7 days.

40: 114135, 114185, 114185.1, 1141185.2, 114185.3, 114185.3, 114185.4, 114185.5 Sanitizer concentration in bucket used to store cleaning rags measured 0 ppm at time of inspection. Store cleaning rags in sanitizer solution between use. Correct within 1 day.
