Cut tomato observed sitting on the prep table by the stove. Cut tomato measured at 56F. Directed employee to put cut tomato on ice or relocate back to the refrigerator. Corrected. (Repeat Violation)
Minor Violation:
A container of cooked pork stomach was stored on the prep table by the stove. Food measured at 46F. Employee put food on ice after inspector reminded him. Corrected.
The following potentially hazardous foods were found out of proper holding temperature (food items stored above inert line of the cold top reach-in coolers):
- conch at 45F
- tofu at 46F
- spicy pork belly at 44F
Maintain all potentially hazardous food at or below 41F at all times. Correct immediately.
14b: 114097, 114099.1, 114099.2, 114099.4, 114099.6, 114099.7, 114101, 114105, 114109, 114111, 114185.3 (a-c) Observed employees were drying tongs and utensils with yellow wiping cloths by the register at the end of the reinspection. Dishes must wash, rinse, sanitize and air dry. Employee may dry dishes with single use paper towels. Education provided. Corrected.
16: 114039, 114039.1, 114039.3, 114039.4 Bus tub of oysters in prep cooler 4 was missing shellfish tag. Per employee, he filed the tag away already. Shellfish tag was located and placed by oysters during reinspection. Education provided again. Corrected. (Repeat Violation)
