3-304.12 VIOLATION OF SECTION 3-304.12 In-use dispensing utensils are not properly stored, specifically: OBSERVED RICE SCOOP STORED IN ROOM TEMPERATURE WATER. THIS VIOLATION HAS BEEN DOCUMENTED ON PREVIOUS INSPECTIONS
Corrective Actions: REQUIRED CORRECTION: In-use food preparation or dispensing utensils shall be stored: 1) in the food with the handles above the top of the food; 2) on a clean portion of the food preparation table or cooking equipment if they are cleaned and sanitized as required; 3) in running water of sufficient velocity to flush particulates to the drain; 4) in a clean, protected location if the utensils are used with food that is not potentially hazardous; or 5) in a container of water at a temperature of 135°F or more or 41°F or less or if the container is cleaned as required. ENSURE IN USE UTENSILS ARE STORED USING ONE OR MORE OF THE ABOVE METHODS.

Corrective Actions: REQUIRED CORRECTION: Physical facilities shall be maintained in good repair. ADVISED REPAIR. ENSURE AMBIENT AIR TEMPERATURE MAINTAINED AT 41F OR LESS BEFORE STORING POTENTIALLY HAZARDOUS ITEMS

6-501.14 VIOLATION OF SECTION 6-501.14 Intake or exhaust air ducts are not maintained properly, or outside venting creates a hazard or nuisance, specifically: OBSERVED FACILITY HOOD NOT VENTING HEAT FROM UNIT. FACILITY INSIDE TEMPERATURE SIGNIFICANTLY HIGHER.
Corrective Actions: REQUIRED CORRECTION: Intake and exhaust air ducts shall be cleaned and filters changed so they are not a source of contamination. If vented to the outside, ventilation systems may not create a public health hazard, nuisance or unlawful discharge. ADVISED CLEANING AND POSSIBLE REPAIR. ENSURE HOOD VENTS PULL HEAT FROM THE FACILITY.
