Corrective Actions: REQUIRED CORRECTION: CORRECT IMMEDIATELY. If a chemical sanitizer other than chlorine, iodine, or a quaternary ammonium compound is used, it shall be applied in accordance with the EPA-registered label use instructions. UNTIL CORRECTED. USING THE OTHER PEROXIDE ECOLAB SANITIZER THAT HAS TO BE HAND-DILUTED TO BETWEEN 272-700 PPM. WILL FIGURE OUT WHAT TEST STRIPS NEEDED FOR THE FRONT TYPE OF SANITIZER AND THEN USE AT THE PROPER LEVEL. I WILL RECHECK THIS AROUND TWO WEEKS FROM TODAY.

Poisonous or toxic materials shall be applied so that a hazard to employees or other persons is not constituted and so that contamination of food or other items will not result. HAND-DILUTED THE BUCKETS TO 272 PPM. KEEP BETWEEN 272-700 PPM. WILL HAND-DILUTE UNTIL THIS IS CORRECTED. I WILL RECHECK THIS AROUND TWO WEEKS FROM TODAY TO SEE THAT YOUR SANITIZERS ARE AUTOMATICALLY DISPENSING AT PROPER LEVELS.

Corrective Actions: REQUIRED CORRECTION: In-use food preparation or dispensing utensils shall be stored: 1) in the food with the handles above the top of the food; 2) on a clean portion of the food preparation table or cooking equipment if they are cleaned and sanitized as required; 3) in running water of sufficient velocity to flush particulates to the drain; 4) in a clean, protected location if the utensils are used with food that is not potentially hazardous; or 5) in a container of water at a temperature of 135°F or more or 41°F or less or if the container is cleaned as required.
