11C: .04(6)(c)Observed multiple thawed vacuum-sealed raw salmon still inside the packaging. The packaging bears a statement from the manufacturer stating to remove the salmon from the packaging before thawing.
Reduced oxygen packaged fish that bears a label indicating that it is to be kept frozen until time of use shall be removed from the reduced oxygen environment:
(i) Prior to its thawing under refrigeration that maintains the food temperature at 41°F (5°C) or less; (C) or
(ii) Prior to, or immediately upon completion of its thawing, using procedures to completely submerge in running water. (C)

Note: All cold-holding and hot-holding items were in compliance unless otherwise noted.
Note: The facility uses grenadine for drinks as an additive.
Note: Employees handling/prepping exposed food items must wear a hair restraint.
Note: Guidelines for non-continuos cooking process were provided to PIC. Written procedures must be approved by the Health Department before implementing those procedures.
Note: If facility plans to have keydrops deliveries with the supplier, a key drop agreement must be obtained and must be available upon request.
Note: Facility must designate a vegetable sink, that is only used for washing fruits and vegetables.
*Note: Permit was suspended due to a third consecutive violation of [.05(6)(a)] - Good Repair & Proper Adjustment (C).
