Raw animal proteins must be stored according to their internal cook temperatures to prevent possible cross contamination.

17D: .07(4)(b)Employee cell phones and keys stored on prep tables in the kitchen. Employee personal belongings must be kept in designated areas to prevent possible contamination of prep areas, etc.
Corrective Actions: Items moved to the office by the PIC.
All cold holding units and hot holding units were checked and all temperatures were in compliance (unless noted otherwise).
