3-1D: .04(5)(e)Observed that facility is serving cold smoked salmon. According to manufacturer, the smoked salmon only reaches an internal temperature of 90 degrees during the cold smoking process and that the fish is raw. If the fish are frozen by a supplier, a written letter of parasite destruction from the supplier stipulating that the fish supplied are frozen to a temperature and for a time specified under subsection (5)(e) of this Rule may substitute for the records specified under paragraph 1 of this subsection. All cold held temperatures were in compliance.
No hot held items at the facility.
No cooking is conducted at this facility. The cooked items are cooked at the main dining hall and transported to the café.
Note: Please ensure that either date marking OR time control is being used. Facility cannot use both. PIC states they will use cold holding for items in the prep cooler. Only the milks will be under time control.
Note: Because facility is serving a raw or undercooked product, the facility's risk type must change from a risk type 1 to a risk type 2.
An unscored informal will be conducted within 10 days, on or before October 25th, 2024 to ensure that parasite destruction letter is received. Failure to correct this violation may result in permit suspension.
